CHEF DANIEL BRUCES’ LEMON RICOTTA PANCAKES
For a different take on pancakes, pass up buttermilk in favor of ricotta and lemon. They make a moist, lemony pancake – the ultimate guest favorite.
2 teaspoons baking powder
3 tablespoons sugar
1/3 cup sifted all-purpose flour
1 teaspoon finely grated lemon zest
1/3 cup milk
2 cups fresh ricotta
Don’t have ricotta? Use the same amount of sour cream or yogurt?
1. In a large bowl, thoroughly combine the ricotta, eggs, milk and lemon zest.
2. Sift together the flour, sugar and baking powder.
Fold into the ricotta mixture.
3. Lightly butter or oil a griddle or skillet and heat over medium high heat.
4. Scoop or pour the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown each pancake on both sides and serve immediately.
